Mace was kickin' Palpatine's ass pretty hardcore for a while, and who knows how much longer the Empire would have held together if the Sith hadn't been around to stir the drink? Sure, the Jedi might have ended up being kind of awful semi-dictators, but you wouldn't have had the Death Star, and you probably would have kept the semblance of parliamentary government.
